How to modified IMG full backup raw files and fix Notion app blocked issue on Poke5

I did flash my Poke5 by another Poke5P's backup raw file. And ththe serial number and Mac address of mine is replaced by the Poke5P.
1. I am finding a way to extract the raw backup file to fix the serial mumber and Mac address then zip it again then flash to mine. Do we have any tool to do that?
2. Or replace the system language and sever files on the original raw file to have mutil language and other severs than CN.
3. There is an issue with Chinese Boox devices: Can not find some apps on CHplay, even copy the apk file, it still doesn't work. The example apps are: Notion and some other apps.
Is the Chinese system block those apps, is there anyway to fix that without flash the rom?

Updates are not an efficient way to mod anything, unless you bought 100 devices.

I don't know where any of those number are or if they are protected by a signed block.
