Because the docx format has no support for arbitrary identifiers. Use EPUB or PDF if you want support for full calibre metadata.

I try ebook-meta with docx.
Option ok are:
title
tags
author
producer

Any more?

In LO Writer in the Document Properties -> Description
Title
Subject
Keywords
Comments
import from per document properties (I save odt as docx to import)
The Author comes from the global user data settings in Options.
Embedding fonts works but not needed if Calibre is on the same computer.

Custom Properties are not imported.
