Trimming covers going wrong
Trimming the cover of a PDF manual cuts off more than I selected:

Seriously, I just trimmed a PDF (was a 2 page like yours) and it worked as expected.
How did you activate the trim action? I used the button after adjusting the original selected area.

I assumed you were doing a Manual Trim

Yes, a manual trim. I clicked 'trim' in the upper left.

It seems to happen when I drag the borders of the trimmed section outside of the original cover - if you look closely at my first screenshot, I dragged it all the right to the right edge.

Defiantly an (over) the edge case (you really need to stop feeding me straight lines)

It should be handled better (or simply stop you from going outside the box)
