Kaleido is a nearly 5 year old "technology" (simply translucent coloured dots on 2 x 2 eink cell surface that don't cover the pixel).
It's not a major innovation, nor is it going to be getting better. It's more appropriate than the older Triton which was simply a copy of the stripes on a mono LCD. All LCDs are also mono, but have 250 to 1000 grey levels vs 14 with black and white for eink and can turn up the rear light to compensate.
QLED is actually mono LCD with a blue back light and green or red dots that change blue light, so only needs 1/6th of power. That can't easily work for eink.

So even Kaleido a few years ago is nearly as good as is possible.

At least from the video, it doesn't look like it's subtle and would be quite distracting to me.
I predicted this because the ereader attempts to do 300 dpi in mono. It should be limited to 150dpi, no doubt that's what the "anti-rainbow" setting does. Certain patterns of lines or spacings of dots at 300 dpi resolution will show up as certain colours due to the 2 x 2 coloured pattern printed on the panel.

I saw that video as well. Honestly, that pattern sort of reminded me of seeing the texture of paper in a print book.

I'll check the Color and see how noticeable it is at regular reading distance. You'd be surprised how little time I've spent with the Color. It mostly stays in the kid's room.

I would really like one of these, but only if I could get it in the Sage.

Yes. If you enter Screenshots=true under the [FeatureSettings] header, pressing the power button will take a screenshot. My preference is a NickelMenu entry that toggles this setting. If you don't have a sleep cover, having this setting true makes it hard to wake your Kobo.

Code:
[FeatureSettings]
ExcludeSyncFolders=(\\.(?!kobo|adobe).+|([^.][^/]*/)+\\..+)|(screensaver_old)
Screenshots=true
For NickelMenu:

Code:
menu_item : main    : Screenshots        : nickel_setting : toggle : screenshots
