We had grilled chicken pasta with mushrooms and mustard greens (in a cream cheese sauce). Side of brussels sprouts and Russian Teacakes made with buckwheat flour for dessert!

My dinner was a simple lettuce & tomato salad daubed with Ken's Buttermilk Ranch Dressing. I graced the salad with a large scoop of cold tuna & egg salad mix plopped in the center. It was pretty good.

Last night was grilled chicken fettichini alfredo with brussels sprouts.
I'm out of sugar and I wanted to bake a cake today. It's kinda gloomy out, but I'll have to go to the store. Rats. |

Last night we had roast and potatoes and coleslaw.
Night before last, we had enchiladas. Tonight will be leftovers. |

Pork chops, zucchini, carrots and potatoes
I recently discovered sheet pan cooking (I know..... old news to people) and love the fact I can do a full meal using just a sheet pan in the oven. |

Tonight's dinner was the usual; nothing fancy. I had baked pork chops seasoned only with salt & pepper, along with frozen mixed vegetables warmed in the microwave with butter & salt.

Tonight was stuffed peppers, cream style corn, fried okra, rolls and bread pudding (made with doughnuts instead of bread). |

Here is a quick idea for you. Meat of your choice. Grab some aluminum foil. Slice a potato and some onion on it. Add a touch of oil or butter. Salt and pepper and any other seasonings you like. Fold the foil around the vegetables. Now do another vegetable of your choice in the same way. Make as many packets of each as the number of people you are feeding. Either bake in the oven or throw on the grill (bbq). |

Each scout would fix their own packet at home with the veggies and seasoning of their choice. Then they'd mark them. After arriving at the campsite, some scouts would set up the camp while others would build a fire and cook the packets. We always used frisbees for plates holders. |

My favorite was hamburger, potato, green onion, green pepper, mushrooms, garlic powder, salt, pepper, and olive oil. Then I'd eat it with a side of sourdough bread.
