I always edit my ebooks. I fix the metadata if required, edit the cover to make it more 'punchy' and scaled to the sceen resolution, and edit CSS to correct the formatting.

I just edit the metadata and update the cover to whichever one I think looks coolest. I also run the count pages/words plugin on them and convert to either epub or azw3 depending on which format is the original.
But I don't edit the text itself. Too much work... |

Most of the time I touch up metadata - is that "editing an ebook"? - but I almost never go under the hood unless there are major, deal-breaking issues (and I'm not super fussy). And there's an automatic KEPUB conversion that happens on the fly, and I don't know whether the OP intends that to count as editing an ebook.

Normally I would say "no", but I guess I do. I use calibre's editor to remove fonts, compress images, and delete non used stuff. I'll use calibre to make sure I like the metadata. I'll do an conversion (usually epub to epub) to get the look I like.
Not sure why I don't consider the above editing. |

I have a complaint. Other should not be there. It's of no use. You either do or you don't edit eBooks. There is no other.

I only edit an "imported" (bought or PD) ebook if it seems broken.

Same. I will almost always split up multi-book volumes. I don't tinker with short story anthologies, but if an ebook comes with three books, I'm splitting that up.

Heh. While I sometimes merge separate volumes into an omnibus and NEVER split an omnibus up. Makes it easier to search.

I like chapters to start on a new page. The best way I have found for this is to split the epub into chapter files.... Sometimes you have to merge them first then split them up again.

What eBooks don't have chapters starting on a new page/screen? I've not seen this.
