Salad and cottage cheese. Just didn't have inspiration and the friends I'm staying with had take out rotisserie chicken and there are mini chocolate bars in the house too

Sadly after last night, there is no chocolate left in the house. We had over 80 trick or treaters and like chocoholic locusts, they left no candy in their path.
Today, I will be forced to eat healthy foods. |

Last night:| Baked salmon fillet and a cauliflower rice / frozen veggie / fresh red pepper concoction. Quite tasty if I say so myself.

Just made some Instant Pot vegetable soup. Yummies.
I based it on Jeffrey Eisner's Five Dollar Soup recipe but made some changes. https://pressureluckcooking.com/five...egetable-soup/ There was a container of chicken broth in the fridge that needed to be used up, and I also sliced up some zucchini in the soup too.
