You seem to be under the faulty impression that it has to one or the other (ebook or multimedia). Ebooks that contain multimedia don't stop being ebooks merely because of those inclusions. Your luddite approach to preserving an archaic definition of ebook amuses me. Had the door to door encyclopedia salesman been able to sell my family hardback Childcraft books that had embedded audio/video in their pages, he would have done so (and I and my siblings would have been enthralled with them). We still, however, would have called them books--with no confusion. The terms "book" or "ebook" need no protection. They will evolve (as all constructs do) over time. Fighting paradigm change is pointless.

I don't remember the district charging for courses offered to students enrolled in the district.

I do seem to remember that there are multiple varieties of CC licenses and only those labelled with a NC (non-commercial) were prohibited from being used in a commercial package.

What I did find humorous was that the licensing and attribution ended up in a part of the ePub3 package that was not visible unless you were editing the file.

I managed to download the mp4 file and embed it in the video folder of my EPUB3. But something is missing:

EPUB Checker reads: The "remote-resource" property was declared in the Package Document, but no reference to remote resources has been found.

This is the string that was automatically generated inside the manifest:

<item id="Balestrini.mp4" href="Video/Balestrini.mp4" media-type="video/mp4"/>

What is missing?

If you included it in the epub container, it's not a remote resource any more. You need to remove the remote-resources property from the manifest entry of the xhtml file that includes the mp4.

Indeed, there was a remote-resource tag in line 18.

Now, there is only 1 error left.
Error RSC-032: Fallback must be provided for foreign resource ... of the type "image/jpg".

I didn't find the solution online and the second image in the EPUB is written in the same way.

For a jpeg image, the proper media-type is image/jpeg *not* image/jpg
And nicely it needs no fallback.

So fix that in the opf manifest entry for that image file.
