Can Calibre change metadata on a file itself
I'm unclear on how to do this in general. I mostly want to just change author and title metadata

I believe that you can send the file to a device from within calibre, and calibre will update the metadata in the ebook at that point.
Calibre keeps the original file and updates a copy of it when either sent to disc or to a device. To change the metadata use the update metadata button in the toolbar. |

There is an "Embed metadata" action that you can add to the main toolbar to update the metadata in book files to match the calibre library.
The "Polish books" action can also do this, but only for books in EPUB and AZW3 format. |
