Because it is a short term beta, for testing a specific feature. When I make general beta releases -- for example for the upcoming calibre 3, they will have dedicated version numbers.

I automatically updated to 2.56 via the Calibre update bash script. Does that mean I have the beta version?

No -- the calibre-update script only pulls the current latest release.
You can install the beta like this: Code:
sudo mkdir -p /opt/calibre && sudo rm -rf /opt/calibre/* && sudo tar xvf /path/to/downloaded/calibre-tarball.txz -C /opt/calibre && sudo /opt/calibre/calibre_postinstall |

Sure.
The 32-bit and 64-bit versions of calibre can coexist. You can also use unlimited instances of the (available in 32-bit only) portable version. ... The somewhat more complicated way, to run multiple versions of the 64-bit build, involves using msiexec to extract the contents of the installer into an arbitrary directory. I don't believe most people would be interested... |

Can I install this on my current computer that holds calibre? Or will it take over? I have no problem copying files to a new library, but I want to keep my current one.

And considering that the beta has already reached final release, it's a bit late for that.
