In terms of longevity and build quality, how do e-ink e-readers compare to lcd tablets? Is an e-reader more fragile than an iPad?

It depends on the eInk Technology - glass screens are much more fragile, Mobius technology not.

What about the inner circuitry? Can e-ink leak or fragment or be otherwise disrupted easily?

I've only seen one eInk screen where capsules ruptured and that was from a person who took it to Mexico and left it in in the sun on their hotel room's balcony around noon. When they picked it up around 5PM, the back of the ereader was hot enough to make them drop it and a couple of the capsules were damaged. The temperature hit ~34° in Cabo San Lucas that week.

im surprised an ipad is even an option... surly if it is then so should be a foldable laptop with a matt screen?

After non-stop hours of use, that gloss from the ipad isnt gonna help yours eyes.
