To exclude all tags as genres, you need to change the regex expression in the EPUB/MOBI options tab from '\[[\w ]*\]' (which excludes tags of the form [tag]) to simply '.' - just a period, no single quotes. This will exclude all tags as genres.
The next release will have added help text in the EPUB/MOBI tab regarding the regex for exclude_tags.
