AFAIK, it's not possible to set sub-languages in Calibre. However, you can use Java Mobipocket Metadata editor to change the language code to a variety of Chinese that requires Traditional Chinese characters, for example, Taiwan:

Try changing the language code to see if it makes a difference.

I did not have any other traditional mobi books.

In the meanwhile i JB my new KP2 and installed DUOKAN (released few days ago), it open pdf (withoud images) very well reflowing the text fantastically. But I still did not found how to enable other dictionary in the menu.
